
Recipe: the Colonel Burger
Hello Burger Fans.
Today we’re revealing the secrets of one of your all‑time favourites: the Colonel Burger. Poupoupidouuuuuu !

For the uninitiated, the Colonel Burger is one of our finest creations, with its fried egg, onion rings, Cheddar Chilli Sambal, bacon and homemade pepper sauce – a real delight!

Colonel Burger recipe (serves 2)
Ingredients
- 2 “Pain Bagnat” buns (or any fresh bun – no industrial bread please!)
- 2×150 g pure beef patty
- Salt & pepper
- Homemade pepper sauce – you can find the recipe here.
- 2×2 slices of Cheddar Chilli Sambal
- 2×2 slices of smoked bacon
- 2×2 onion rings
- 2 eggs
- Rocket
- Sliced red onions
Preparation
- Shape the beef into patties with a burger press or ask your butcher to do it.
- Place the meat on a very hot, lightly oiled plancha. It should sizzle when it touches the surface. If you don’t have a plancha use a frying pan. Salt and pepper the meat. Cook for 3–4 minutes on the first side.
- Turn the patties over and place two slices of Cheddar on each. Cook for another 3–4 minutes. Use a lid or dome to help the cheese melt.
- Meanwhile fry the bacon and onion rings until crispy. Fry the eggs sunny side up.
- Toast the buns. Spread a little pepper sauce on the base, place the patty with melted cheese, bacon, onion rings and egg. Top with rocket, sliced red onion and more sauce. Close with the bun top and serve immediately.
