
Marc, our master butcher
Hello Burger Fans,
We owe a lot to our master butcher Marc, without whom our Burgers wouldn’t be what they are: the best burgers in town. At Huggy’s Bar we quickly understood, thanks to countless trips to the United States and just as many burger tastings, that above all it’s the meat that makes a burger unforgettable… or downright detestable! It has to be tasty, tender and not too fatty; it needs the perfect texture and consistency.

With this in mind, we needed to find the expert who could understand our needs and meet them. We met Marc Schmitz, proud owner of the Etal d’Or butcher’s on rue Saint‑Gilles. Known for his reputation and his passion for quality meat, Marc selects the best cattle breeds and matures them for two to three weeks to develop flavour and tenderness.
From selecting the carcass to preparing the patties, Marc and his team take care of everything. They trim the meat by hand, remove any sinew and fat, and grind it to obtain a perfect grind. The result: a juicy, flavorful patty that holds together when cooked but melts in the mouth.
Marc’s expertise also extends to our sausages and charcuterie, such as the famous Millionaire Bacon. It’s thanks to this close collaboration that we can offer you burgers with incomparable taste and texture.
