If our Burgers are the best, it’s also thanks to our meat. And if our meat is exceptional, it’s thanks to Marc Schmitz. A passionate artisan, perfectionist and talented butcher, our accomplice since our beginnings.

The meeting that changed everything

When we launched HUGGYS, we took things VERY seriously. No way we were going to settle for merely decent meat, we wanted THE best.
We toured butcheries, blind‑tested meats, and the verdict was unequivocal: it was Marc’s meat that knocked our taste buds out. Not surprising when you know his journey and the numerous awards he’s won.

A challenge met with flying colours

From the very beginning, we put him to the test. We dreamed of a unique mince, a homemade recipe that would make all the difference in our Burgers. Challenge accepted!
He met the challenge with flying colours and created a secret recipe, designed exclusively for HUGGYS, with a perfect balance between texture and flavour.
Since then, every day, he delivers this exceptional meat to us, freshly prepared, never compromising on quality.

A tailor‑made patty

At our place, it’s pure Blanc Bleu Belge, a local breed renowned for its finesse and its taste that pops in your mouth. Our patties: 150 grams, exactly. No cheating, no compromise, that’s the rule, since always and forever. Because when it’s perfect, we don’t change a thing.

They are shaped by hand, daily, in each restaurant, by the skilled hands of the entire HUGGYS Family, determined to turn each cooked Burger into a pure pleasure bomb.

Passion in every piece

At Marc’s, butchery is a family story filled with know‑how and passion, passed down from father to son for three generations. A heritage of well‑done work, absolute respect for the product, perfect mastery of every stage of the transformation.

Today, with his son at his side, he continues this tradition by producing himself, from A to Z, all the meats we use. He supplies us with: minced meat, steaks, bacon, chicken supremes and wings, as well as all the special meats for our Burgers of the Month.

The golden rule: his meat has never crossed a freezer door.
Absolute freshness, maximum quality, that’s his motto and ours too!

HUGGYS growth

We grew together, we accelerated, and Marc kept pace without flinching.
More restaurants, more Burgers, more meat, more challenges.

To keep up, he literally expanded his workshop, obtained new AFSCA certifications and boosted his production. All of it, without ever compromising his artisan standards. And since we never stop innovating, Marc is always game to push the limits with us. He has already concocted gems like homemade bacon, pulled pork, a sausage patty, ham hock… and it’s not over.
Soon, he’s going to hit even harder with a bone marrow patty. Get ready, it’s going to be heavy.

A craftsman this talented is rare. But Marc isn’t only a master butcher. He’s a soul, a presence, a true pillar.

Always full throttle in his craft, always ready for new projects… and often present at our staff parties. We love bumping into him, a drink in hand, not far from Roberto, his partner in lively nights.
Because working hard is good, but enjoying life is even better.
