Ketchup leather… what’s that?!

Hello Burger Fans.

Last week the programme “I Comme” asked for our burger expertise to shoot a report dedicated to ketchup leather. Thomas, one of our founders, played along with Ludovic, whom you may remember for his feats on Pékin Express!

Each of them made their own ketchup leather… with rather different results, as you can see in the photo below.

Did you know?
Ketchup leather was invented by American chef Ernesto Uchimura of the burger restaurant chain Plan Check in Los Angeles. The idea is simple: dehydrate ketchup to make a sort of fruit leather that melts on the meat and prevents the bun from getting soggy. Genius? Maybe! But at Huggy’s we’re not convinced: we love the taste of our Brussels Ketjep ketchup too much to replace it.

Curious to see how to make it? Tune in to the “I Comme” replay and follow along. Then tell us what you think: will ketchup leather be part of your next burger or not?

See you soon for more burger experiments!
